This month, in an effort to save money, stick to our budget and eat healthier, I am challenging myself to eat at home all month.  This may not seem like a hard thing, but trust me, I will have a very hard time with it.

I have drawn out a plan for the week, which actually sounds pretty good to me.  The boys are out of school and I only have one client to visit, so I shouldn’t have any excuse of being too tired or too busy to get it done. 

So here goes – Day 1 – Meatball Subs

I had originally planned on having lasagna tonight, however, I spied some sandwich rolls that D brought home from his mom’s house (read free!) and meatball subs popped into my mind.  By noon I figured out I had all the ingredients to make these meatballs.   They turned out so good and made for an excellent sandwich.  I’m so proud of my creation (maybe a little too proud, lol) and we will definitely be having them again!

So lasagna has been rescheduled to tomorrow night, which will actually be better, because D will be able to take leftovers for lunch when he goes back to work – which will make everyone happy! 😉

Another busy week for us.  We are starting to ramp up for the last month of school in addition to May being the month that both boys celebrate their birthdays.  Needless to say, I am in major planning mode!  I need easy-ish dinners so here is what I came up with.

Tuesday – Homemade Mac N Cheese, Salad

Wednesday – Chicken Fajitas with beans and rice

Thursday – Lasagna, Salad

Friday – Pizza

Saturday – Chicken Enchiladas, Salad

Sunday – Apricot Pork Chops, veggie

Monday – FFYS (Fend For Your Self)

I am feeling that I need to come up with some more sides.  Salad only at just about every meal is just not cutting it.  The trick is going to be adding something without adding more time to the prep/cook process.  Any ideas?

Lately I have been so uninspired to make a meal plan.  We have been eating out a lot, which is really bad – for our wallets and waistlines.  It’s so easy to get into that rut though, especially when we have baseball or t-ball 3 nights a week.  My perfectionism comes in to play here too.  I feel like if we can’t have a nice home cooked meal with a main dish and two sides, well then, I may as well not even try.  Not to mention that when I think about having to cook at 7pm, or even heating something up, I instantly think it will take too long and the boys will get to bed too late, yada, yada, yada.

So this week I have pulled up my big girl britches and come up with a meal plan that is boring but easy.  I am resolving now to stick to it, and not blow it off in favor of Panda Express Orange Chicken!

Tuesday – Homemade Mac N Cheese and a salad

Wednesday – Tacos, beans, rice

Thursday – Egg salad sandwiches

Friday – Eat from the snack bar at the ball field (ok, technically this is eating out, so maybe we will grill some hotdogs at home instead.)

Saturday – Fajitas, bean, rice

Sunday – Easter dinner at my Moms!

Monday – Chicken Enchiladas

Lately I have been doing my grocery shopping on Tuesdays, which has been out of my normal norm, lol.  I actually like going on Thursday mornings instead because the weekly ad comes out on Wednesday and it seems as if the shelves are stocked a bit better.  Last week I had sick kids home just about all week so I ended up going on Saturday.  I went at about 7:30 am and loved it!  I was by myself and the shelves were completely stocked.  There was hardly anyone there, so I got in and out in a hurry.  On my way home I decided that it would only be fair for my husband to bring the groceries in and put them away since I had gotten up so early and got out of the house.  Luckily, he agreed.  🙂

Here’s our menu:

Sunday – Leftover Lasagna, salad and french bread

Monday – Honey Mustard Glazed Chicken, salad

Tuesday – Penne pasta with Alfredo sauce, salad, french bread

Wednesday – French Onion Soup

Thursday – Some kind of sandwich wrap, chips, grapes

Friday – Pizza

Saturday – Fend For Yourself  (FFYS)
